Here is the recipe for the pasta :
Smoked Paprika Pasta with Mozarella and Basil (Serves 2-3)
Ingredients:
1 tbsp olive oil
1 tsp garlic infused olive oil
2 red peppers, de-seeded and cut into chunks
3 large tomatoes, cut into chunks
1 courgette, sliced
1 tsp smoked paprika
1/4 tsp crushed chillies
Grind of pepper
1 tbsp tomato puree
1 handful basil, chopped
1 ball mozarella, torn into bite sized chunks
200g pasta
To serve:
A couple of chunks of mozarella
Couple of basil leaves
Method:
Put oven on at 180 degrees C
Put all chopped veg onto a baking tray with the olive oil, garlic infused olive oil, smoked paprika, crushed chillies and a grind of pepper. Mix well and roast for 30 minutes til veg is soft, stirring occasionally
Put the pasta on to cook as per packet instructions
Once veg is cooked put in a food processor and blend til smooth
Put the blended veg into a saucepan with the tomato puree and the basil. Mix and heat through
Drain pasta and add it to the pan with the tomato sauce mix. Add the mozarella chunks and stir through.
Serve in bowls topped with a couple of basil leaves and little chunks of mozarella
